Imagine my delight when I saw this South Beach friendly cookie recipe on my e-buddy CJ’s blog! I just made a batch and they, like the oatmeal muffins, have being too tasty as their only liability. Unlike the muffins, however, I doubt these would freeze well. So I’ll just have to be strong!
CJ’s Oatmeal Cookies
1 1/2 Cups Oats
1/2 cup whole wheat flour
1/2 tsp salt
1/4 tsp baking soda
1/4 tsp cinnamon (optional)
3 tbsps chopped pecans (optional)
2 bananas
5 tbsps oil
Preheat oven to 350 degrees. Mix all dry ingredients in a bowl. In another bowl, mash up bananas and mix in oil. Add the wet to the dry and mix ‘em up! Drop by heaping teaspoonfuls onto ungreased cookie sheet. Bake 10-15 minutes. Makes about 24
I actually got 20 cookies out of this. Based on that, the nutritional info came out thusly:
Per cookie: 83 calories 4.6g fat 9.4 g carbs 1.5g protein 74mg sodium
I thereby declare, for all my fellow South Beachers, that two cookies constitutes one carb serving. I would consider two of these cookies with a glass of milk a pretty good breakfast, by the way. Since they are fairly similar in content to the Oatmeal Muffins - and maybe even a little healthier!
